Quarantine Chicken

So good. This is the recipe I made every Sunday for months during the pandemic. Works best with a whole chicken from Star Market.

  1. Preheat oven to 425 degrees.
  2. Cut a length of string. Get out several paper towels, two small glass bowls, the chicken brush, the high-sided 8x10 glass baking pan, and a piece of foil for tenting later.
  3. Melt butter in small glass bowl. Mix salt and freshly ground pepper in another small glass bowl.
  4. Pat chicken down, outside and inside, with paper towels and place in pan.
  5. Sprinkle some of salt & pepper inside chicken; stuff with onion & apple sections.
  6. Tie legs together with string. Brush exterior with butter, sprinkle rest of salt & pepper.
  7. Roast 1-1/2 to 2 hours, depending on size, to a temp of 165°.
  8. Let rest 15-20 minutes before carving.
