Mom's fried chicken from my childhood

  1. Heat oven to 350°. Spray baking dish with non-stick coating. Heat oil in a large sauté pan (just enough to cover the bottom).
  2. In a large plastic bag, combine flour and seasonings. Drop chicken, one or two pieces at a time, into bag and shake to coat. Fry in oil just until browned, turning to get all sides.
  3. As each piece gets done, place it into the baking dish, with the larger pieces along the outside. Set sauté pan aside.
  4. Bake 30 to 45 minutes.
  5. For gravy, dissolve bouillon cube in sauté pan with hot water, stirring to scrape bottom of pan. Spoon any drippings out of chicken dish and add to pan.
  6. Put a few spoonfuls of seasoned flour into a small jar with a lid, add lukewarm water and shake well to dissolve. Pour a bit at a time into sauté pan, stirring well, over medium-high heat. Continue to add flour paste and water, stirring constantly over heat, until gravy is desired thickness and amount.
