Coconut Curry Red Lentil Soup

Be sure to have naan and cilantro on hand. This makes plenty to freeze.

  1. Rinse lentils and let drain.
  2. Heat up a large pot to medium high heat. Add coconut oil and melt, sauté ginger & garlic for 2-3 minutes.
  3. Add lentils and broth, bring to a boil. Reduce heat to medium.
  4. Add red curry paste, garam masala, curry powder, and turmeric. Let simmer for 10-15 minutes, until lentils have soaked up most of the liquid and are soft.
  5. Add coconut milk and stir until nice and creamy.
  6. Serve immediately with fresh cilantro as garnish and naan.
