The chicken has to be cooked in stages - and in two pans - and it takes the Dutch Oven and another pot to hold it all. It takes a while, but makes a lot and freezes wonderfully.

  1. In a shallow dish, combine flour, 1 teaspoon salt, and the black pepper. Roll chicken in flour mixture, coating completely.
  2. Heat oil in Revere skillet over medium heat; in two stages, brown chicken on all sides. Remove chicken from pot; set aside.
  3. In dutch oven, heat oil over medium heat. Add mushrooms, green pepper, onion, garlic, and cook 5 minutes, or until onions are tender, stirring occasionally.
  4. Add broth, pasta sauce, tomatoes, Italian seasoning and 1 teaspoon salt; add chicken to pot and bring to a boil. Reduce heat to low and simmer 30 minutes, or until chicken is fork-tender, stirring occasionally.
  5. Serve over rice or noodles. Freeze leftovers.
