Baked Buffalo Wings

Use a combination of super hot and regular Frank's and (I have added a PDF file right here to test something out) 20-30 shakes of scotch bonnet hot sauce to heat it up. Remember, this is a plan-ahead by at least a day dish. Pick up the wings from Rocket City Meats and let them sit in the fridge overnight.

  1. Line large sheet pan with foil and place two baking racks on top of the pan.
  2. Combine baking powder, salt, pepper, garlic powder and onion powder in big red bowl.
  3. Toss wings in bowl to coat evenly with the baking powder and spices.
  4. Place the wings on the rack in a single layer and allow to sit in refrigerator overnight.
  5. Preheat the oven to 400 degrees. Bake for 60 minutes or until wings are light golden brown and crispy. Allow to sit for 10 minutes.
  6. Whisk together the hot sauce, butter and honey in the big red bowl; toss the wings, 5 or 6 at a time, to coat evenly.
  7. Serve with celery sticks and ranch & bleu cheese dressing.
  8. Note: Start one batch of fries in lower over shortly before wings are done. Put second batch in oven while wings are resting.
